If you’re not sure if your eggs are safe, try the float test. Fresh eggs sink; older ones float due to an enlarged air cell. You can also crack the egg into a bowl and check for anything off.
When buying commercial eggs, follow these tips:
- Always pick eggs from a refrigerated case.
- Open the carton to check for dirty or cracked shells.
- Look for the USDA grade shield or mark for higher – quality eggs.
- Only buy as many eggs as you need.
- For egg products, make sure the containers are tightly sealed and unopened.
If you have extra eggs close to expiration, you can make dishes like quiche, shakshuka, homemade pasta, breakfast burritos, pound cake, crème brûlée, strata, crepes and crepe cake, French toast, soufflé, torte, or egg muffins.
